Beets And Goat Cheese Pasta :-Beets and goat cheese pasta is a delicious and nutritious dish that can be prepared in a short amount of time. The dish consists of soft pasta that is tossed in a simple sauce that is well balanced. Ingredients :

  • 3 medium red beets (peeled and cut into small 1-inch pieces)
  • 1 medium onion (peeled and roughly chopped)
  • 1 head garlic
  • 3 tablespoons olive oil
  • salt and pepper (to taste)
  • 4 ounces goat cheese (crumbled)
  • ¼ cup vegetable broth (heated)
  • 1 tablespoon honey
  • 8 ounces pasta (such as penne, uncooked)
  • ¼ cup pistachios (crushed)
  • 3 fresh basil leaves (sliced)

 

Instructions :

  • Preheat the oven to 400 degrees Fahrenheit. Place parchment paper on a baking pan and set it aside.
  • After placing the red beets and onion on the baking sheet, sprinkle them with one tablespoon of olive oil and season them with salt and pepper. You may then bake them. Perform a thorough toss.
  • Cut off about half an inch from the top of the head of garlic, leaving enough space for each clove to be exposed. Prepare a sheet of foil and place the head on it. A tablespoon of olive oil should be drizzled over the head of garlic, and then salt should be sprinkled on top of the garlic.
