Mediterranean Orzo Salad šŸ„—

Spread the love

Mediterranean Orzo Salad :-Orzo is a type of pasta that is very little and resembles rice. It is one of the pantry basics that I always like to have on hand because it requires very little effort to prepare and can be eaten either hot or cold.

To tell you the truth, it is one of my favorite varieties of pasta. It can be toasted with some sun-dried tomatoes for a quick side dish, baked with chicken prepared in the Greek style, or thrown into a soup with lemon when I’m seeking for something that will make me feel more at ease.

Mediterranean Orzo Salad

Ingredients :

  • 1 Ā½Ā cupĀ dry orzo pasta
  • 1Ā pintĀ grape or cherry tomatoes,Ā halved
  • 2Ā green onions,Ā trimmed and chopped (both white and green parts)
  • Ā½Ā green bell pepper,Ā seeds removed, chopped
  • 1Ā cupĀ packed chopped fresh parsley,Ā about 1 Ā½ ounces
  • Ā½Ā cupĀ packed chopped fresh dill,Ā about 0.5 ounces
  • Ā¼Ā cupĀ sliced pitted kalamata olives,Ā about 1 ounce
  • 2Ā teaspoonsĀ capers
  • Feta cheese, to your liking

For The Dressing

  • 1Ā lemon,Ā zested and juiced
  • Ā¼Ā cupĀ extra virgin olive oil
  • 1Ā garlic clove,Ā minced
  • 1Ā teaspoonĀ oregano

Instructions :

  • In order to prepare the orzo pasta in accordance with the recommendations that are given on the package, you should spend around eight minutes cooking it. Remove the liquid from the container and allow it to cool for a little length of time.
  • Grape tomatoes, green onions, bell peppers, parsley, dill, olives, and capers should all be mixed together in a big mixing dish of an appropriate size. Combine until all of the components are spread evenly.

  • For the time being, the most expedient course of action would be to keep the feta cheese in reserve. There ought to be some orzo pasta included in the dish.
  • Place the dressing in a bowl and mix it together. Lemon juice, lemon zest, extra virgin olive oil, garlic, oregano, and a generous teaspoon each of kosher salt and black pepper should be mixed together in a small bowl as the ingredients for the dressing.
  • Combine all of these components in a single mixture. A whisk is the tool that should be used to mix the components.

  • The salad should be tossed after the dressing has been poured over it. This should be done until the dressing is entirely incorporated into the salad, and the orzo pasta should be completely coated with the dressing.
  • It is recommended that a layer of feta cheese, which has a dense and creamy consistency, be added on top.
  • The dish should be prepared by covering it and putting it in the refrigerator for a short period of time before it is served.

Notes :

  • For best flavor, To ensure that the orzo salad consumes as much of the dressing’s flavors as possible, it is best to combine the ingredients when the pasta is still slightly warm. Prepare the dish by covering it and placing it in the refrigerator for a short period of time (up to an hour) before serving.
