Mediterranean Orzo Salad :-Orzo is a type of pasta that is very little and resembles rice. It is one of the pantry basics that I always like to have on hand because it requires very little effort to prepare and can be eaten either hot or cold.

Ingredients :

  • 1 Ā½Ā cupĀ dry orzo pasta
  • 1Ā pintĀ grape or cherry tomatoes,Ā halved

  • Ā½Ā green bell pepper,Ā seeds removed, chopped
  • 1Ā cupĀ packed chopped fresh parsley,Ā about 1 Ā½ ounces
  • Ā½Ā cupĀ packed chopped fresh dill,Ā about 0.5 ounces
  • Ā¼Ā cupĀ sliced pitted kalamata olives,Ā about 1 ounce
  • 2Ā teaspoonsĀ capers
  • Feta cheese, to your liking

For The Dressing

  • 1Ā lemon,Ā zested and juiced
  • Ā¼Ā cupĀ extra virgin olive oil
  • 1Ā garlic clove,Ā minced
  • 1Ā teaspoonĀ oregano

Instructions :
