One Pot Sausage Pasta: Sausage pasta cooked in one pot with kale, onion, garlic, red pepper, and cheeses like Parmesan and mozzarella. This simple dinner in a skillet is a weeknight classic!

This recipe cooks the pasta directly in the saucepan with the other ingredients, saving you the trouble of boiling it first. This makes the ideal weeknight dinner!

One Pot Sausage Pasta

Ingredients

 

  • 2 tablespoons olive oil, divided
  • 1 pound  sausage links, cut into 1/2-inch thick slices (chicken or smoked sausage)
  • ½ medium yellow onion, diced
  • 1 red bell pepper, seeds removed and diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 cups chopped kale
  • 15 oz diced tomatoes
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon fennel seed
  • 8 ounces uncooked penne pasta
  • 2 cups vegetable or chicken broth
  • 1/2 cup chopped fresh mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 3 tablespoons chopped fresh basil, for garnish

 

Instructions

 

  • Add the olive oil to a big skillet or pot and heat it over medium heat. Add the garlic, onion, red pepper, and slices of sausage.
  • Cook for 5 to 7 minutes, turning frequently, or until the sausage is cooked through and the onion and peppers are soft.
  • Stir in the tomato paste. Add the diced tomatoes, fennel seed, basil, and oregano along with the chopped kale.

 

  • Add the broth and the penne noodles. Mix until well blended. Pasta should be al dente after 8 to 10 minutes of cooking,
  • stirring now and then. Cover with a lid. Take off the cover, mix, and then pour in the new mozzarella cheese. Cook, stirring,
  • until cheese is melted. Add fresh basil and Parmesan cheese on top. Warm up and serve.
