Simple Shredded Cabbage Pie Casserole :-Rich flavor is gushing out of this baked cabbage casserole that is topped with ultra-cheesy cheese. Our Russian cabbage pie is particularly delicious when accompanied by either sour cream or fresh parsley.

Simple Shredded Cabbage Pie Casserole

 

INGREDIENTS :

  • 4 large eggs
  • ¼ cup plain low-fat greek yogurt
  • ¼ cup mayonnaise, I used vegan mayonnaise
  • ¼ cup flour, gluten free blend or regular all purpose, see notes
  • 1 teaspoon baking powder, gluten-free if neccessary
  • 1 teaspoon cornstarch
  • 1 teaspoon salt or to taste
  • Pinch of black pepper
  • 1 ⅓ cup mozzarella cheese, grated
  • Butter for greasing the baking dish
  • Freshly chopped parsley for garnish

 

INSTRUCTIONS :

Prepare a circular baking dish measuring 8 or 9 inches in diameter by greasing it with butter or neutral cooking oil spray and preheating the oven to 375 degrees Fahrenheit.
Be sure to use butter to grease the baking dish.

Whisk together the eggs, yogurt, and mayonnaise in a medium-sized mixing basin until everything is combined. Put aside for later.

NOTES :

There are several brands of flour that I prefer to use, including King’s Arthur Measure Measure for Measure, Schar Universal, Mix C, and Bob’s Red Mill. It is recommended to use xantham gum at a ratio of 1 to 1, however it can also be done without.

 

Also, flours made from a single component, such as oat flour (which you can easily make yourself by grinding the oats in a coffee grinder), tapioca flour, or cassava flour, will work just well.

 

This cabbage pie can also be made without the use of dairy by using vegan mayonnaise (which is fairly popular in Europe and has a flavor that is comparable to the original, if not better!), soy yogurt, or coconut yogurt respectively.

Make sure that the yogurt you use is as thick as sour cream or crème fraiche, and you can use any plant-based yogurt you like. Yes, the flavor is a little bit different, but if you try to avoid dairy products, you are already aware of this fact and have become accustomed to it. In addition, we use goods derived from soy.
