5-Ingredient Healthy Sweet Potato Oatmeal Cookies Recipe
Warmly spiced, soft and chewy cookies are a delicious healthier treat. No flour, easy prep, versatile! Add your favorite nuts or dried fruit.
INGREDIENT
– ⅔ cup sweet potato cooked and mashed– ⅓ cup pure maple syrup– ½ cup unsweetened almond butter– 2 cups rolled oats– 1 tsp ground cinnamon– ½ tsp sea salt– Optional Additions:– 1 tsp pure vanilla extract– ½ tsp ground ginger– ½ cup to 1 cup chocolate chip
INSTRUCTIONS
Cook sweet potato as desired (see post). Heat a 350-degree oven. Use parchment on a large baking sheet.
Step 1
Cool the potato to room temp. The process is accelerated by refrigeration. Once cooled, mash the sweet potato with a fork or potato masher and measure out ⅔ cup.
Step 2
In a large bowl, mix mashed sweet potato, almond butter, pure maple syrup, and vanilla. Mix wet ingredients.
Step 3
Mix dry ingredients—oats, cinnamon, and salt—in the bowl to make thick, sticky cookie dough. Stickier than cookie dough. This is normal. Want chocolate chips? Add them.
Step 4
Mound cookie dough on parchment-lined baking sheets. Form discs with your hands or press dough balls with a large spoon since the dough won't spread or change shape during baking.
Step 5
You can make any size cookies from the dough. I make 9. Cooking time depends on dough mound size.
Step 6
Cookies should be golden brown after 10–12 minutes on the center rack of a preheated oven. Wait 10 minutes before removing the cookies from the baking sheet. Enjoy!
