6-Ingredient Oatmeal Apple Pumpkin Bars Recipe

This silly simple pumpkin apple bar recipe is the perfect fall treat! These chewy, flourless, vegan, and refined sugar-free bars are hard to believe!


– 2/3 cup pureed pumpkin – ½ cup pure maple syrup – 3/4 cup unsweetened almond butter – 2 1/2 cups rolled oats – 1 tsp pumpkin pie spice – 1/2 tsp sea salt – 1 large granny smith apple peeled, cored and chopped


Preheat oven to 350°F and line an 8-inch square baking pan with parchment. Cooking spray or coconut oil can be used to bake without parchment paper.

Step 1

Mix the wet ingredients—pureed pumpkin, maple syrup, and almond butter—in a large bowl until thick and creamy.

Step 2

Mix rolled oats, pumpkin pie spice, and sea salt in the bowl until a thick, sticky dough forms.

Step 3

Evenly distribute chopped apple into dough.

Step 4

With a rubber spatula, spread the pumpkin apple oatmeal bar mixture into the baking dish and bake for 30–35 minutes until the edges are golden brown and the centre is clean.
