Blueberry Mascarpone Cream Pie Recipe

What a treat! Mascarpone cream that is as smooth as silk and blueberries that are jam-like all packed into a sweet tart shell.   

Crust – 1 3/4 cups (220 g) all-purpose flour – 1/2 teaspoon sea salt – 1 tablespoon powdered sugar – 1 1/4 sticks (145 g) unsalted butter, cold – 3-5 tablespoons cold water Blueberry jam topping – 2 cups (230 g) wild frozen blueberrie – 1/2 cup (100 g) white granulated sugar – 1/4 cup (60 ml) lemon juice – 2 tablespoons corn starch Mascarpone filling  – 3/4 cup (180 ml) whipping cream, straight from the refrigerator – 4 tablespoons (40 g) powdered sugar – 1 teaspoon vanilla bean paste, (or vanilla extract) – 12 oz (340 g) mascarpone cheese, straight from the refrigerator

INGREDIENTS

Making the crust Mix flour, salt, and sugar in a food processor or large bowl. Top mixture with grated butter. Pulse 4-6 times or use a pastry blender to crumble.  

INSTRUCTIONS

STEP 1

Pour 3 teaspoons cold water. Stir it in and the dough should clump. The dough should stick together if you add water tablespoon by spoonful.

STEP 2

Dump the dough onto plastic wrap and knead it into a ball. Flatten dough into a disk, wrap firmly, and freeze for 30 minutes or refrigerate for 2 hours (or overnight).   

STEP 3

Remove dough from fridge when ready. Wait 5 minutes at room temperature. Coat your work area and rolling pin with flour.   

STEP 4

Rotate the dough occasionally while spreading it out to a 10-inch (26-cm) round to avoid sticking.   

STEP 5

Wrap dough around rolling pin and unroll over tart pan. Fit the sides gently and trim any dough overhanging the pan. Fork-prick the crust bottom. Refrigerate for 15 minutes.  

STEP 6

Preheat oven to 425°F (215°C). Remove the tart pan from the freezer. Cover it with parchment. Put baked beans in. Bake 15 minutes.  

STEP 7

Take tart out of oven and lower temperature to 375°F (190°C). Take the beans and parchment paper off the crust.   

STEP 8

Continue baking the crust for 10 minutes until golden brown. Cool fully after removing from the oven.
