Brown Sugar Oatmeal Cookie, Cookie Dough Ice Cream Sandwiches Recipe

I almost forgot about chocolatey treats because I've been so thrilled about summer fruit. Last time we discussed chocolate was a few weeks ago...See these bonfire brownies, but two weeks is too long for me.

Ingredient

CHOCOLATE CHIP COOKIE DOUGH ICE CREAM – 5 large egg yolk – 3/4 cup granulated sugar – 3 cups whole milk – 2 teaspoons vanilla – 1/4 teaspoon flaky sea salt – 1 stick (1/2 cup) salted butter – 1/3 cup light brown sugar – 1/4 cup granulated sugar – 1 pasteurized egg – 2 teaspoons vanilla – 1 3/4 cups all-purpose flour – 1 cup mini semi-sweet chocolate chips BROWN SUGAR OATMEAL COOKIES – 1 3/4 cups old fashioned oats – 1 cup all-purpose flour – 1 cup packed light brown sugar – 1/2 teaspoon baking soda – 1/2 teaspoon salt – 1/2 cup canola oil or melted coconut oil – 1 large egg – 2 teaspoons vanilla extract – 1 cup semi-sweet chocolate chips

Whisk egg yolks and sugar in a medium pot till pale yellow. Pour in milk, vanilla, and sea salt. Heat the saucepan on medium-high. Boil the mixture slowly.

Stir constantly until the mixture thickens and coats the back of a wooden spoon, 8–10 minutes. Remove from heat when thickened.

Immediately pour the custard into a large heatproof bowl using a fine-mesh sieve. Cool slightly, cover, and refrigerate 4 hours or overnight.

Making cookie dough. Mix butter, brown sugar, and sugar in a large bowl. Beat in egg and vanilla until creamy. Beat in flour and salt. Mix in chocolate chips.

Spread cookie dough evenly on a parchment-lined baking sheet. After freezing 20–30 minutes, roughly slice the cookie dough into bite-sized pieces.

To make oatmeal cookies. Heat a 350-degree oven. Mix oats, flour, brown sugar, baking soda, salt, canola oil, egg, and vanilla in a large bowl until mixed. Crumbly dough. Mix in chocolate chips.

Hand-clump a tablespoon of dough. Squeeze the dough into a ball with your hands. Place on parchment-lined baking sheet. Use remaining dough.

Bake until golden and firm, 12-15 minutes. Let cool fully. Churn ice cream in a machine as directed. Add cookie dough bits in the last few minutes of churning.

Scoop 1 scoop of ice cream onto half the cookies. Gently press remaining cookies into sandwich. Freeze for 4-6 hours or eat now. Remove 5-10 minutes before eating to soften. Enjoy!
