Cabbage Roll Soup Recipe

This hearty unstuffed cabbage roll soup recipe has all the flavours of traditional cabbage rolls in soup form. The whole family will love it. Add different veggies to customise.


– 1 Tbsp avocado oil – 1 medium yellow onion chopped – 2 large carrots chopped – 4 cloves garlic minced – 1 small head green cabbage chopped (about 4 cups) – 1 lb ground beef * – 2 vine-ripened tomatoes chopped** – 1 (16-oz) can tomato sauce – 4 cups chicken broth or beef broth – 1 Tbsp Italian Seasoning – ¼ tsp black pepper to taste – Sea salt to taste – 3 cups cooked brown rice or white rice optional***


Heat avocado oil in a Dutch oven on medium-high. Mix in onion, carrots, garlic, and cabbage. Cover the pot and stir occasionally while softening the vegetables for 8 minutes.

Step 1

Move the vegetables to one side of the pot and add ground beef. First brown the ground beef in that pot before adding it to the vegetables.

Step 2

Chopped tomatoes, tomato sauce, broth, Italian seasoning, black pepper, and sea salt are added. Cover and boil soup. 

Step 3

Once boiling, reduce heat to medium-low and stir occasionally for 20 minutes. After boiling, the soup is ready in 20 minutes; simmer it for an hour.

Step 4

Stir in cooked brown rice. Serve large bowls of fresh parsley-topped cabbage roll soup. Top this simple soup with sour cream or Greek yoghurt.
