Caramelised Red Onion & Anchovy Pasta With Gremolata Recipe
Luxurious two-person dinner? Valentine's Day pasta requires little prep but is easy to cook, so you can spend time together.
– 2 tbsp olive oil– 3 red onions, thinly sliced– 200g pappardelle (or any long pasta)– 2 anchovy fillets in oil, drained– 2 tbsp tomato puréeFor the gremolata– 1 lemon, zested and juiced– 15g parsley, roughly chopped– 2 garlic cloves, finely chopped
INGREDIENTS
Heat the oil in a big pan with a heavy bottom over medium heat. Add a lot of salt to the red onions before you fry them.
INSTRUCTIONS
STEP 1
Over medium-low heat, stir the food often for 30 to 35 minutes, or until it turns brown and caramelized.
STEP 2
Make the gremolata in the meantime. Add the parsley, garlic, lemon zest, and juice, along with a pinch of salt.
STEP 3
Mix well and set aside. Follow the directions on the package to cook the pappardelle, but save 120ml of the pasta water.
STEP 4
As soon as the onions start to turn brown, add the anchovy pieces and let them melt.
STEP 5
With 15 twists of black pepper, which is about ½ tsp, add the tomato purée and stir them in. Cook for 4 to 5 minutes, until the mixture turns dark.
STEP 6
Add the cooked pasta and the 120ml of pasta water that you saved to the sauce. Mix everything together well, then put it on a bowl to serve. Put some on top of the gremolata to serve.
