This jarred treat can be made ahead and eaten for morning. I love caramel apples and Greek yogurt, but adding cookies makes it taste like apple pie.
Caramelized apple– 4 large apples, (a sweet variety like Gala)– 4 tablespoons (60 g) unsalted butter– 1 teaspoon lemon juice– 1/2 cup (110 g) light brown sugar– 1 teaspoon ground cinnamon– 1 teaspoon vanilla bean paste, (optional)To make parfait– 17.6 oz (500 g) Greek yogurt– 20 butter cookies, (I'm using Danish cookies)– 1 apple, sliced for decoration (optional)
INGREDIENTS
Make caramelized apples first:-Remove apple cores and peel. Cube them tiny. Heat butter in a large skillet on medium-low.
INSTRUCTIONS
STEP 1
Cook chopped apples and lemon juice, stirring often, for 10 minutes until apples are mushy and easily broken apart with a spatula.
STEP 2
Add brown sugar, cinnamon, and vanilla (if using). Heat until sugar melts and sauce is smooth. Cool apples fully before assembling or keep in the fridge for 2 days.
STEP 3
To make parfaits, add a few teaspoons of caramel apples to each glass. Add 2 smashed cookies (or more for a thicker layer) and a couple dollops of Greek yogurt.
STEP 4
Layer again. Add leftover caramel apples, yogurt, and crumbled cookies to parfaits to finish. Add apple slices if desired.
STEP 5
Serve parfaits after 1-2 hours in the fridge. This softens cookies. Serve parfaits immediately to keep cookies crispy. Prepared parfaits last 2 days in the fridge.
