Caramelized Condensed Milk Mini Apple Pies Recipe

Posts this week appear to be a million words. Today is Friday, so I'll get to the pies. The pies must be discussed. Elevated apple pie. I think sweetened condensed milk, a magical ingredient, makes everything beautiful.

– 1 (14 ounce) can sweetened condensed milk – 1 teaspoons vanilla bean seeds removed OR 2 vanilla – 4 honeycrisp or granny smith apples chopped – 1 tablespoon butter – 1 teaspoon cinnamon – 1 tablespoon bourbon optional – 2 tablespoons butter melted – 1/2 cup cinnamon sugar 1/2 cup sugar + 2 teaspoons cinnamon CRUST  – 2 1/2 cups all-purpose flour plus more for rolling – 1 teaspoon kosher salt – 1 cup chilled unsalted butter cut into pieces, 2 stick – 1 large egg yolk – 1/3 cup cold buttermilk plus more if needed

Pour sweetened condensed milk into a non-sick sauce pot. Stir constantly while simmering sweetened condensed milk over low heat for 20–30 minutes to avoid burning.

Once the sauce reaches a light caramel colour, add 1 teaspoon vanilla and remove from heat. Allow to cool. Condensed milk thickens when cooled.

Place butter in a large skillet over medium heat. Stir in apples and cinnamon. Cook apples for 8 minutes until tender. Stir in melted butter after removing from heat. Let apples cool completely before making pies.

Make crust. Combine all-purpose flour and salt in a large bowl. Break butter into flour with your fingertips until it resembles small peas.

Mix the egg yolk with 1/4 cup chilled buttermilk in a small bowl before adding it to the flour mixture. Mix with a wooden spoon, adding buttermilk (no more than 1 tablespoon at a time) until dough just comes together (a few dry areas are okay).

Gently knead dough on a lightly floured surface for 1 minute to remove dry areas. Divide dough in half. Create circular discs from each piece. Roll one disc of dough into a 16-inch circular on a lightly floured board.

Cut as many dough circles as possible with a three-inch round cookie cutter. Repeat with remaining dough. I got 16 rounds (8 pies).Prepare two baking sheets with parchment.

Build your pies after everything cools. Leave a 1-inch border around one half of the pie crust circles and spread a tablespoon of caramelised sweetened condensed milk. Place a tablespoon of apples on the condensed milk.

Cover the apples with the remaining pie crust circles, stretching the dough as needed. Fork-crimp all edges. Bake the pie on the pan. Cover the pies with plastic wrap and refrigerate for 2 days or 45 minutes.

Pies should be golden brown after 25–30 minutes. Pies may leak when removed. Just fine. Melt butter and generously sprinkle cinnamon sugar on warm pies. Warm or room temperature.
