Cauliflower Gnocchi with Spicy Tomato Sauce Recipe

Cauliflower Gnocchi with Spicy Tomato Arrabbiata Sauce. This 15-minute pasta meal is delicious and healthful.

– 1 12-ounce (350 g) package frozen Trader Joe's cauliflower gnocchi – ▢1/4 cup (60 ml) water – ▢2 tablespoons (30 ml) extra virgin olive oil – ▢1 fresh red chili, chopped – ▢1/2 cup (80 g) thinly sliced onion – ▢1 tablespoon finely chopped or grated garlic – ▢1 teaspoon crushed red chili, or to taste – ▢3/4 teaspoon salt – ▢1 (400 g) 14-ounce can whole or crushed tomatoe – ▢Chopped Italian parsley and grated Pecorino or Parmesan cheese, optional

INGREDIENTS

Do not thaw the gnocchi before putting them in a big nonstick skillet. Cover the pan, add the water, and raise the heat to medium-high. Cook for exactly six minutes.

INSTRUCTIONS

STEP 1

Add the rest of the ingredients, except for the cheese and parsley, and mix them together. 

STEP 2

Turn down the heat, cover, and cook for 5 minutes, until the sauce thickens a bit and the gnocchi are soft but not falling apart (do not overheat).

STEP 3

If you want, you can serve it warm in bowls with cheese and parsley on top.
