Chicken & Lemon Skewers Recipe

Chicken skewers with a herby yogurt coating, salad, and flatbreads are tasty and healthy. For a light weeknight meal.

– 1 small pack mint, leaves picked – 150g natural yogurt, plus extra to serve (optional) – 1 lemon, zested and juiced – ½ tsp ground cumin – ½ tsp ground coriander – 2cm piece ginger, grated – 4 skinless chicken breasts, each cut into 6 piece – 4 wholemeal flatbreads or pitta – 2 Little Gem lettuces, sliced – 1 small red onion, sliced, to serve – pickled red cabbage, chilli sauce and hummus, to serve (all optional)

INGREDIENTS

Put half of the mint leaves, half of the lemon juice, all of the lemon zest, spices, and ginger in a bowl.  

INSTRUCTIONS

STEP 1

Stir in heaps of black pepper and a touch of salt. Mix in chicken pieces and refrigerate for 20–30 minutes.  

STEP 2

Soak 4 big wooden skewers in water for at least 20 minutes. You can also use metal skewers.

STEP 3

Set the grill to medium heat and put foil on the grill tray before you start cooking the chicken. Attach the chicken to the wet metal or wooden skewers.  

STEP 4

Attach the chicken to the wet metal or wooden skewers. Grill for 15 to 20 minutes, turning the skewers over halfway through, until the chicken is browned and cooked all the way through.

STEP 5

Warm the flatbreads under the grill for a few seconds, then put the lettuce, chicken, red onion, mint, and the rest of the lemon juice on top.  

STEP 6

You can add things like yogurt, pickled cabbage, chili sauce, or hummus if you want.
