Coconut-Lime Chicken Skewers Recipe

Southeast Asian tastes can be tried with tasty, juicy coconut-lime chicken skewers. It's quick, tasty, and good for you. This meal is low in carbs and gluten-free.

Cashew-Coconut Gremolata: – ▢2 tablespoons (30 g) grated unsweetened coconut – ▢2 tablespoons (30 g) roasted unsalted cashews, finely chopped – ▢Grated zest of 1 lime (juice the rest of the lime for marinade) – ▢2 tablespoons chopped cilantro – ▢1 teaspoon nigella seed, or substitute with sesame seed – ▢¼ teaspoon flaky sea salt Chicken: – ▢1 ½ pounds (680 g) boneless, skinless chicken (breasts or thighs), sliced into 2-inch chunk – ▢2 inch piece of ginger, peeled and grated – ▢1 shallot, finely chopped – ▢2 tablespoons (30 ml) fresh lime juice – ▢½ cup (120 ml) coconut milk – ▢½ teaspoon EACH ground cardamom, ground black pepper, ground coriander and ground turmeric – ▢1 teaspoon kosher salt – ▢8 green onions/scallion Coconut-Lime Chutney: – ▢½ cup (120 ml) coconut powder or unsweetened canned coconut cream – ▢1 serrano or green jalapeno chili pepper, finely chopped – ▢2 tablespoons (30 ml) water – ▢1 tablespoon (15 ml) fresh lime juice – ▢½ teaspoon salt, or to taste

Prepare the chicken To marinate the chicken, put it in a bowl or baking dish that can hold it.

INSTRUCTIONS

STEP 1

Ginger, onion, lime juice, coconut milk, salt, and spices should all be mixed together. Cover the chicken with the sauce. 

STEP 2

Cover and let it sit at room temperature for 15 to 30 minutes. You can also put it in the fridge for up to 6 hours.

STEP 3

Set a pan or grill outside that has been oiled on medium-high heat. Skewer the chicken on sticks.

STEP 4

The chicken should be cooked all the way through until it is crisp. Use tongs to turn the pieces over every 5 minutes.

STEP 5

Put the onions on the grill and cook them until some of them are charred and wet.

STEP 6

To make the sauce Add the coconut powder or cream and mix it with the other things.

STEP 7

Mix the gremolata In a small bowl, mix the gremolata items together. Add about 2 tablespoons of the gremolata to the chicken. Put the sauce, extra gremolata, onions, and serve with the dish on the side.
