Cranberry White Chocolate Blondies Recipe

Cranberry White Chocolate Blondies are a quick and easy bar with sweet white chocolate and sour cranberries.

FOR THE BLONDIES: – 2 cups (240g) all-purpose flour – 3/4 teaspoon baking powder – 1/2 teaspoon salt – 1 cup (226g) unsalted butter, melted and slightly cooled – 2 cups (400g) granulated sugar – 2 large egg – 1 teaspoon vanilla extract – 1 cup (114g) dried cranberrie – 1 cup (170g) white chocolate chips or chunk FOR THE GLAZE: – 3/4 cup (82g) confectioners’ sugar – 1-2 tablespoons milk

Make the blondies: Preheat oven to 350°F. Prepare a 9"x 13"x 2" baking pan. Mix flour, baking powder, and salt. Set aside.

Step 1

Beat butter and sugar with a medium-speed electric mixer until combined. After adding each egg, mix well. Mix in vanilla.

Step 2

Reduce mixer speed to low and slowly add flour mixture, mixing just until combined. Mix in cranberries and white chocolate.

Step 3

Evenly distribute the dough in the pan. Bake the bars for 35–40 minutes until golden brown and a pick inserted into the centre comes out clean. Pan-cool on a wire rack.

Step 4

To make the glaze, mix confectioners' sugar and 1 tablespoon of milk until smooth. Add milk slowly until the glaze is thick but pourable. Apply glaze to cooled bars. Cut and serve bars.
