Creamy Strawberry Mango Popsicles Recipe

This summer we need homemade Creamy Strawberry Mango Popsicles in our freezers. Simple recipe: heavy cream (or canned coconut milk), strawberry jam, and mango slices. They never fail or simplify. Creamy, sweet, fruity, and delicious. Fast becoming everyone's favourite simple frozen treat!

Ingredient 

– 2 1/4 cups heavy cream or coconut milk – 1 jar (12-16 ounce) strawberry jam – 2 cups fresh or frozen mango chunk

Mix 1 1/2 cups milk/cream and strawberry jam in a blender. Divide the mixture evenly between 8 popsicle moulds or paper Dixie cups.

Use 1/4 cup water or 1/3 cup mango juice to blend mango pieces. Make smooth with 3/4 cup milk/cream. Fill moulds to the top with mango blend over strawberry jam.

Gently stir strawberries into mango puree with a knife. Each mould can have a few thinly cut strawberries or raspberries.

Freeze 4 hours or overnight until hard. Store in the freezer until eating!
