Delicious Air Fryer Roast Dinner Recipe

Air fried the major ingredients for Sunday dinner instead of using the oven. Microwave the gravy instead of heating it on the stove.

– 2-3 medium potatoes, peeled and cut into quarter – 3 tsp vegetable, olive or rapeseed oil – 1 large or 2 small chicken breasts, skin-on – 3 medium carrots, peeled and cut into baton – 100g frozen peas – gravy, to serve

INGREDIENTS

Drain and rinse potatoes after 30 minutes of soaking. Heat the air fryer for 2 minutes. After drying, place potatoes in a bowl with 1 tsp oil, salt, and pepper.  

INSTRUCTIONS

STEP 1

Coat the potatoes with oil with your hands or a spoon, then place in the air fryer basket in one layer. Cook at 190C for 10 minutes.

STEP 2

Sprinkle salt and freshly ground black pepper on the chicken and coat it in another 1 tsp oil. After 10 minutes, slide the potatoes to the sides and place the chicken in the basket. Cook 10 minutes.

STEP 3

Cover carrots with remaining oil. After 10 minutes, remove the chicken from the basket, mix the carrots and potatoes, move them to the sides, and put the chicken back in.  

STEP 4

Cook at 190C for 10-15 minutes. The chicken should be done when the juices run clear when a knife is inserted into the thickest area.  

STEP 5

Alternatively, a meat thermometer should read 70C. If not done, cook for 5 more minutes. Rest the chicken beneath foil.

STEP 6

Put the peas in a small ovenproof dish or mug with 2 tbsp water and foil to keep moisture in. Put in the air fryer basket with the chicken and cook for 10 more minutes at 190C.  

STEP 7

Golden, crisp potatoes, delicate carrots, and toasty peas. Slice the chicken breast and serve with gravy and vegetables.
