Delicious Coffee Cake Recipe 

This coffee cake is delicious. A moist, soft crumb with cinnamon filling, streusel crumb, and cream cheese glaze. 


Streusel Crumb – 2/3 cup all-purpose flour 76 gram – 3 tbsp white sugar 42 gram – 3 tbsp light brown sugar 42 gram – 2 tsp cinnamon powder – 1/4 tsp nutmeg powder – 1/3 cup unsalted butter room temperature 75 gram Cinnamon Filling – 3 tbsp all-purpose flour 23 gram – 3 tbsp light brown sugar 42 gram – 1/2 tbsp cinnamon powder Cake Batter – 1 1/2 cup all-purpose flour 191 gram – 1 tsp baking powder – 1/4 tsp baking soda – 1/4 tsp salt – 1/2 tsp cinnamon powder – 3/4 cup unsalted butter room temperature 170 gram – 3/4 cup granulated sugar 150 gram – 1/4 cup brown sugar 55 gram – 2 large egg – 1/2 tbsp vanilla extract – 1/2 cup sour cream 120 gram – 3 tbsp milk 45 ml Cream Cheese Glaze – 1/4 cup cream cheese at room temperature 56 gram – 1 tbsp unsalted butter 14 gram – 1/4 cup powdered sugar 31 gram – 1-3 tbsp milk

crumble Add flour, sugar, cinnamon, and nutmeg. Add butter. Crumble butter and flour/sugar. Fully mix butter and dry ingredients. Refrigerate while making cake batter.

Filling cinnamon Mix flour, brown sugar, and cinnamon in a small bowl. Set aside.

Cake Batter Preheat oven to 350ºF. Oil and parchment an 8" or 9" springform pan. Deepen your 8" pan. My height is 3”. 

Step 3

Mix flour, baking powder, soda, salt, and cinnamon in a medium bowl. Set aside. Mix butter on medium speed for 2 minutes with an electric mixer. Use a stand or hand mixer. 

Step 4

Whisk butter, granulated, and brown sugars for 2–3 minutes until fluffy. Mix occasionally by scraping the bowl. Mix before adding next egg. Add vanilla. Stir in sour cream. 

Step 5

Slowly add half the dry ingredients. Add milk, stir. Combine remaining half of dry ingredients. Mix well. Last, spatula-fold the batter instead of mixing. Don't overmix to avoid dry cake. 

Step 6

For assembly Bottom half batter. Apply cinnamon filling evenly to batter. Add remaining batter. Softly smooth. Cover cake with crumb evenly. 

Step 7

Baking Bake the cake for 50–60 minutes in a preheated oven. Cover with aluminium foil if crumble browns too much and centre is raw. 

Step 8

After crumbling, the top is firm and the centre isn't jiggly. Batter should not ooze from clean cake toothpicks. Slice the cake after cooling.  

Step 9

In a convection oven, bake at 325ºF. Oven and cake pan size determine baking time. Try 50 minutes to avoid cake overbaking. 

Step 10

Cream Cheese Glaze A hand mixer will mix cream cheese, butter, powdered sugar, and 1 tbsp milk to make the glaze. Agitate the mixture with a whisk. 

Step 11

Increase milk to glaze thin. Too liquid? Add powdered sugar. Polished glaze.
