Easy Chorizo Chicken Chili Recipe

A bowl of spicy, smoky chili with chicken chorizo sausage (or your favorite meatless sausage), spices, and beans is a hearty dinner. Today or tonight, this 30-minute dish will fuel you!

Spice Blend – ▢1 tablespoon (15 g) ground cumin – ▢1 tablespoon (15 g) ground coriander – ▢1 tablespoon (15 g) smoked paprika – ▢¼ teaspoon cayenne pepper Chili – ▢2 tablespoons (30 ml) extra-virgin olive oil – ▢1 white or yellow onion, chopped – ▢2 garlic cloves, finely chopped – ▢1 red bell pepper, chopped – ▢1 jalapeno pepper, chopped – ▢1 pound (450 g) spicy chicken sausage, removed from the casing – ▢2 tablespoons (30 g) tomato paste – ▢2 tablespoons chopped chipotle chili in adobo sauce – ▢3 15-ounce cans white navy beans or pinto beans, drained – ▢1 ½ cups (375 ml) water – ▢1 ½ teaspoons kosher salt – ▢¼ cup chopped cilantro – ▢2 cups (225 g) grated cheddar or Monterey Jack cheese Garnish Idea – ▢Sliced avocado – ▢Tortilla chip – ▢Sliced jalapeno – ▢Lime wedge

Mix the spice blend In a small bowl, mix all the flavors together.

INSTRUCTIONS

STEP 1

Make the chili In a Dutch oven or big pot, heat the oil. Put in the garlic, onion, bell pepper, and jalapeño. Cook for three to five minutes on medium heat, until the onion gets soft.

STEP 2

Put the chorizo in the pot. Stir the meat around a lot to break it up as you cook until it's no longer pink.

STEP 3

Add the ground spices and mix them in. The spices will taste better after cooking in the oil for about one minute. 

STEP 4

Add the beans, water, salt, and chipotle paste. Bring to a low boil. Reduce the heat to a low level, partly cover the pot. 

STEP 5

Cook for 25 minutes, stirring every now and then. Take the pan off the heat and add the parsley and 1 cup of the cheese.

STEP 6

Put the chili in bowls and top them with extra cheese and any other toppings you like.
