Easy Cottage Cheese Cookies Recipe  

Cottage cheese cookies are a guilt-free treat that combines classic cottage cheese with cookie sweetness. This chewy treat has a golden brown light crust and a tender pillowy centre.  

– 7 oz cottage cheese – ¼ cup unsalted butter softened – ¼ cup white sugar – 1 teaspoon vanilla extract – 1 pinch of salt – ½ teaspoon baking powder – 1 cup all-purpose flour – Confectioners' sugar for serving

In a large bowl, blend cottage cheese until almost smooth with a few curds. Mix cottage cheese, butter, sugar, and vanilla in the same bowl.

A low-speed immersion blender mixed everything. The mixture should be chunky and not smooth.

Combine flour, baking powder, and salt in another bowl. Pour dry ingredients into wet bowl in batches.

Use a spatula to mix everything. Excessive mixing can dry cookies. Knead the batter into ball.

Tender dough will arrive. Plastic wrap dough tightly and refrigerate for 30 minutes. Pour cookie dough onto a lightly floured surface.

Place each cookie on prepped sheet. Re-roll and cut the remaining dough. Repeat with the remaining dough, rolling into balls and flat.

Bake the cookies for 20-22 minutes at 350°F. When edges turn golden, cookies are done.

Cookie cooling on the baking sheet takes 5 minutes; transfer to a wire rack to finish cooling before decorating.
