Easy Grilled Chicken Bruschetta Recipe

Grilled chicken bruschetta with cherry tomato and basil salad is easy to cook ahead. Perfect BBQ or picnic dish!

Chicken – ▢4 (450 g) boneless skinless chicken breast – ▢Kosher salt and freshly ground black pepper – ▢2-3 tablespoons chopped fresh herbs, such as thyme, rosemary and basil – ▢1-2 garlic cloves, pressed or chopped to a paste – ▢2 tablespoons (30 ml) extra-virgin olive oil Bruschetta Topping – ▢1 pound cherry tomatoes, sliced in half – ▢2 teaspoons red or white wine vinegar – ▢1 shallot, finely chopped – ▢1 teaspoon granulated sugar or honey – ▢1/2 teaspoon salt, or to taste – ▢3 tablespoons (45 ml) extra virgin olive oil

INGREDIENTS

Light a charcoal grill and get it ready for straight medium-hot grilling. Heat a gas grill to medium-high.

INSTRUCTIONS

STEP 1

Put the chicken in a small baking dish and sprinkle it with a lot of salt and pepper. For 4 breasts, I use about 1 teaspoon of kosher salt and 1/2 teaspoon of pepper. 

STEP 2

Sprinkle the herbs and garlic on top of the chicken breasts. Drizzle them with olive oil and turn them over to cover them all.

STEP 3

Once the grill is hot, cook the chicken for about 6 minutes on each side until it is browned and fully cooked.

STEP 4

Put the chicken on a plate. Put the tomato salad on top, and then serve.

STEP 5

Put all the topping ingredients in a medium bowl and gently toss them together. Add more salt or vinegar if you think it needs it.
