Easy Meatball And Tomato Soup Recipe
One serving of this low-calorie tomato soup provides three of your 5-a-day. Meatballs and big couscous make it full.
– 1½ tbsp rapeseed oil
– 1 onion, finely chopped
– 2 red peppers, deseeded and sliced
– 1 garlic clove, crushed
– ½ tsp chilli flakes
– 2 x 400g cans chopped tomatoes
– 100g giant couscous
– 500ml hot vegetable stock
– 12 pork meatball
– 150g baby spinach
– ½ small bunch of basil
– grated parmesan, to serve (optional)
INGREDIENTS
In a pot, heat the oil. While the onions and peppers are cooking, add the garlic and chili flakes and stir them in.
INSTRUCTIONS
STEP 1
Cook for one minute. Turn the heat down to low and add the veg stock, huge couscous, and tomatoes.
STEP 2
Add the meatballs and spinach after adding the seasonings. Let it simmer for 5 to 7 minutes, or until it's fully cooked.
STEP 3
Put it in bowls and, if you want, top with basil and Parmesan.
