Easy Peanut Lime Salad Recipe
Share this punchy peanut lime salad plate. Served alone or with sides, you'll make this again and again.
– 2 tbsp olive oil
– 60g plain peanut
– 1 tsp black mustard seeds
– 10 fresh curry leaves
– 1 red onion, roughly chopped
– 1 large potato, chopped into 1cm cube
– ½ tsp ground turmeric
– 300g rice, cooked and cooled
– 1 Ruby or Little Gem lettuce, roughly chopped
– ½ cucumber, deseeded and roughly chopped
For the dressing
– 50ml olive oil
– 50ml lime juice
– 1 tsp Dijon mustard
INGREDIENTS
Heat oil in a frying pan over low heat and roast peanuts for 5 minutes until golden. Add mustard seeds and curry leaves and fry for a moment.
INSTRUCTIONS
STEP 1
Stir in the onions, potatoes, and 2 tablespoons of water, then cover and simmer for 10 minutes until tender.
STEP 2
After removing from heat, add ½ tsp salt and ¼ tsp freshly ground black pepper and stir thoroughly. Allow to cool for 30 minutes.
STEP 3
Transfer to a large bowl and add remaining ingredients. Mix the dressing ingredients in a small bowl, pour over the salad, toss well, and serve.
