Easy Prawn & Harissa Spaghetti Recipe

Our spaghetti dinner for two comes with king prawns and harissa sauce. It's easy to make and healthy, so it's great for a meal in the middle of the week.

– 100g long-stem broccoli, cut into third – 180g dried spaghetti, regular or wholemeal – 2 tbsp olive oil – 1 large garlic clove, lightly bashed – 150g cherry tomatoes, halved – 150g raw king prawns – 1 heaped tbsp rose harissa paste – 1 lemon, finely zested

INGREDIENTS

Bring a pan of water with a little salt to a boil. After you add the broccoli, boil for 1 minute and 30 seconds, or until the broccoli is soft. 

INSTRUCTIONS

STEP 1

Remove the water and set it aside. Follow the directions on the package to cook the spaghetti. Then, drain it and set aside a ladleful of the cooking water.

STEP 2

Make the oil hot in a big pan. Add the garlic clove and cook it for two minutes over low heat. 

STEP 3

Take it out with an angled spoon and throw it away, but don't throw away the flavored oil.

STEP 4

Put the tomatoes in the pan and cook them over medium heat for 5 minutes, or until they start to get soft and juicy. 

STEP 5

Add the prawns and stir them in. Cook for two minutes, or until the prawns turn pink. Stir the harissa and lemon zest into the food to coat it.

STEP 6

Put the cooked spaghetti and pasta water in a bowl with the harissa and prawns. Add the broccoli and mix it in. Season to taste and serve.
