Focaccia Stuffing Recipe

This Focaccia Stuffing recipe is a tasty Italian dish that's perfect for the holidays. Cut day-old focaccia bread into cubes.

– 16 ounces Italian sausage, casings removed – ¼ cup butter – 1 cup celery, diced – 1 cup onion, diced – 1 cup apple, cored and diced – 1 tablespoon fresh sage, chopped – 1 teaspoon dried thyme – ½ teaspoon kosher salt (plus more to taste) – 8 cups focaccia bread, cubed – 1 large egg, beaten – 3 cups broth, chicken or turkey

Make sure the oven is preheated to 375 degrees if you are going to be making the stuffing straight away.

Heat a big pan on medium. Spoon-break sausage while cooking. It should take 5–6 minutes to cook. Remove sausage from skillet and set aside.

Return the skillet to the fire and add butter, celery, onion, apple, sage, thyme and salt. Cook for 9-10 minutes to soften all vegetables.

Cut focaccia into 1-inch cubes with a serrated knife. Use a big mixing bowl. Mix in cooked sausage and vegetables. Mix well.

(Refrigerate this mixture and continue when ready to bake.) Toss the stuffing again with the beaten egg and chicken stock.

Fill a 9x13 casserole dish with stuffing. Bake 30 minutes under foil. Uncover and bake for 10 minutes until top is lightly browned and internal temperature is 165.
