INGREDIENT

– 16 ounces cod cut into filet – Sea salt and black pepper – 2 tsp garlic powder – 4 Tbsp unsalted butter – 1 Tbsp olive oil or avocado oil – 4 large cloves garlic minced – Lemon wedges for serving

INSTRUCTIONS

Heat the oven to 375°F. Unpackage the cod and place it on a plate or cutting board. Pat excess moisture with a paper towel.

Step 1

Put the cod in a casserole, baking dish, or sheet pan. Season each fillet with sea salt, garlic powder, and black pepper on both sides.

Step 2

Warm a small skillet on the stove over medium. Butter, olive oil, and garlic. Heat garlic for 2–4 minutes until fragrant but colourless.

Step 3

Increase heat to medium high if garlic is closely monitored. Remove garlic from heat before it browns. To enhance garlic flavour without overcooking.

Step 4

Put garlic butter on cod. Spread garlic butter on cod with a spoon. Bake cod at 145°F for 12-15 minutes. Check fish temperature with a meat thermometer in its thickest part.

Step 5

Have fun with lemon slices and favourite sides! I like fish with chopped fresh parsley and red pepper flakes.
