Green Curry Fried Rice Recipe 

Thai Green Curry Fried Rice combines the fragrant and vivid aromas of green curry with the comforting simplicity of fried rice. Beautifully stir-fried jasmine rice with vegetables and Thai green curry paste. Replace chicken with tofu, prawns, or your preferred protein.

Ingredient

– 1 tablespoon vegetable oil or coconut cream – 2 tablespoons green curry paste – 2 cloves garlic minced – 1 cup protein of your choice chicken, shrimp, tofu, or a combination – 3 green onions chopped – 1 cup mixed vegetables such as bell peppers, peas, carrots, and broccoli, bamboo shoots, corn, diced – 1 tablespoon fish sauce optional for non-vegetarian version – 1 teaspoon sugar – 2 cups cooked jasmine rice preferably chilled or day-old – Fresh basil leaves for garnish optional – Lime wedges for serving

Make jasmine rice according to the package instructions and let it cool or use leftover rice.

Cut green onions, dice veggies, and thinly slice chicken breast. Heat coconut cream or vegetable oil over medium-high heat in a large wok or skillet.
