Grilled Chicken and Beetroot Salad with Apples and Beans Recipe

Beetroot lovers will love this easy, healthy salad recipe! With smoked or grilled chicken, red kidney beans, red onion, apple and a delicious mustard dressing, this beetroot salad is delicious.

– 1 can 15 oz red kidney beans  – 1 pound beetroot  – 1 green apple  – 1 medium red onion  – ½ pound smoked chicken  – Fresh parsley for serving – 1 tablespoon dijon mustard – 1 tablespoon liquid honey – 3 tablespoon lemon juice  – 4 tablespoon good quality virgin olive oil – ¼ teaspoon black pepper – Salt to taste



Wash and dry beetroot with paper towels. You can steam or boil it until a knife can pierce it.

Or, as I did, you could bake it in the oven. A casserole dish or baking sheet should be ready.

In an oven that has been preheated to 400 degrees Fahrenheit, wrap the beets in aluminium foil and bake them for one hour.

You can check the doneness of it by piercing it with a knife. After it has cooled to the touch, peel it.

Cut into cubes measuring 1-2 inches each. Combine the dressing ingredients in a mason jar or small bowl and shake well.

In a large bowl, prepare the remaining ingredients and stir in the fresh beetroot. Add the dressing and stir to blend.

Try serving this salad cold but with warm beets. You'll make the beets separately, so adding them later is easy.

Add parsley or other fresh herbs, lemon zest, and goats cheese and let sit for 15 minutes to blend flavours.
