Healthy Blueberry Breakfast Bars Recipe

The loveliest grab-and-go snack, healthy breakfast or treat! Simple blueberry muesli bars are addictive and easy to make!

INGREDIENT

– 3 large (225g) ripe bananas (about 1 cup mashed) – 1 cup (240g) unsweetened almond butter – 2 cups (180g) rolled oats – 3/4 tsp sea salt – 1 1/2 cups (150g) fresh blueberrie

INSTRUCTIONS

Preheat the oven to 350°F and line a 9" x 9" baking pan with parchment. An 8" x 8" square pan works, but the bars must be baked longer.

Step 1

Mash bananas in a large bowl until creamy. Stir in almond butter to combine wet ingredients. Add vanilla extract now.

Step 2

Mix the dry ingredients—rolled oats, ground cinnamon, and sea salt—into the wet ingredients until a thick, sticky dough forms. Mix in blueberries gently.

Step 3

Spread the blueberry mixture evenly in the baking dish. Top the bars with extra blueberries if desired.

Step 4

Bake on the centre rack of the preheated oven for 20–25 minutes until the edges are slightly golden brown and the bars feel firm when poked.When room temperature, slice and serve the bars.
