Healthy Peach Ricotta Pastries Recipe

Made in less than half an hour, this is the ideal treat for brunch!  

GREDIENTS – 250 g 1 cup | 9oz ricotta cheese – 2 teaspoons vanilla bean paste – 45 g 3 TBSPs granulated sugar – 1 1/2 tablespoons peach or apricot jam, whisked with a spoon – one 40 x 24-cm | 16 x 9, 5-inch sheet of ready rolled puff pastry (or similar size) – 1 egg, beaten – 8 canned peach halve – powdered sugar for serving

INGREDIENTS

Preheat oven to 200°C (392°F). Mix ricotta, vanilla paste, sugar, and 1/2 tablespoon jam in a small bowl. Taste and add sugar after stirring.  

INSTRUCTIONS

STEP 1

Unroll puff pastry onto a parchment-lined baking sheet. Slice the sheet into 8 slightly rectangular pieces with a knife or pizza cutter.  

STEP 2

Put a scoop of ricotta in the center of each slice and brush with beaten egg. Fold each pastry corner until the sides almost meet.   

STEP 3

Tuck the tips of each folded pastry part beneath a peach half in the center, cut side down. Brush egg on pastry dough and jam on peach halves.  

STEP 4

Bake the pastry in the center of the oven for 20 minutes until puffy and golden brown.  

STEP 5

Remove from oven, sprinkle with powdered sugar, and cool on rack. Serve hot or cold. Cover leftover pastries in the fridge and devour within a day.
