Homemade Chicken Alfredo Pasta Recipe

Chicken Alfredo is a dream come true because it has juicy, golden-brown chicken breast slices and long, thick strands of fettuccine pasta that are easy to slurp in a rich, classic Alfredo pasta sauce.

Chicken: – ▢½ teaspon garlic powder – ▢½ teaspoon onion powder – ▢Salt and freshly ground black pepper – ▢1 pound (450 g) boneless, skinless chicken breasts, about 2 breast halve – ▢Extra virgin olive oil Alfredo sauce – ▢8 tablespoons (113 g) butter, cut into cube – ▢2 cups (475 ml) heavy whipping cream – ▢1 garlic clove, grated or finely chopped – ▢¼ teaspoon salt – ▢¾ cup grated Parmesan cheese Serving: – ▢8 ounces (225 g) fettuccine pasta, or other long pasta shape such as linguine, pappardelle or tagliatelle – ▢¼ cup grated Parmesan cheese – ▢2 tablespoons chopped parsley

INGREDIENTS

Add 1 tablespoon of salt every quart of water to a big pot of boiling water for pasta.

INSTRUCTIONS

STEP 1

Season and cook chicken Mix garlic and onion powders, ½ teaspoon salt, and ¼ teaspoon fresh black pepper in a small bowl. 

STEP 2

The mixture should cover both sides of the chicken breasts. The chicken can be seasoned and chilled 8 hours ahead.

STEP 3

Until a drop of water sizzles, heat a large (10-12-inch) skillet on medium-high. Add 1 tablespoon of oil and stir to coat the pan bottom. 

STEP 4

Add chicken breasts and fry until first side is golden brown, 2-3 minutes. Chicken should be flipped and cooked for 2 more minutes.

STEP 5

Lower the heat to medium and cover the pan. After 3-5 minutes, the chicken should feel firm and cooked through. 

STEP 6

Rest the chicken on a cutting board while making the sauce. If the pan has charred or dark spots, clean it.

STEP 7

Add pasta to boiling water and cook until al dente, 8-10 minutes, while chicken cooks. Shake off excess water in a colander.

STEP 8

Making Alfredo sauce If necessary, remove browned parts from the skillet. Restart the heat on medium-high. Add butter to the skillet. When butter is melted and no longer sizzling, add cream, garlic, and salt. 

STEP 9

The cream should decrease and thicken in 5 minutes after coming to a low boil and stirring occasionally. Stir the Parmesan cheese into the pan after turning off the heat until smooth.

STEP 10

Serving Toss the cooked, drained pasta in the sauce with tongs in the skillet. You can serve it in the skillet or in a bowl.
