Homestyle Italian Minestrone Soup Recipe

A simple homemade minestrone soup using dried pasta, beans, canned tomatoes, and carrots. Fresh vegetables, beans, and noodles make this vegetable soup a filling bowl dinner.

– ¼ cup (60 ml) extra virgin olive oil – ▢1 ¼ cups (250 g) chopped carrots (2 large or 3 small carrots) – ▢2 celery stalks, chopped (1 ¼ cups) – ▢1 (80 g) onion, chopped – ▢Kosher salt – ▢1 tablespoon (30 g) finely chopped or grated garlic, 2-3 clove – ▢1 tablespoon (15 g) tomato paste – ▢1 teaspoon Italian seasoning, dried thyme or oregano – ▢¼ teaspoon crushed red chili pepper – ▢1 15-ounce tomato puree or crushed tomatoe – ▢2 15-ounce cans kidney or cannellini beans (or 1 of each), drained – ▢4 cups (950 ml) vegetable broth – ▢½ pound (225 g) green beans (fresh or frozen), trimmed and cut into 2-inch piece – ▢Parmesan cheese rind, optional – ▢1 cup small dried pasta, such as elbows, small shells or ditalini – ▢2 cups (80 g) dark leafy greens such as spinach, chard or kale, roughly chopped – ▢Grated Parmesan cheese, for serving

INGREDIENTS

In a big soup pot (5 or 6 quarts), heat the olive oil over medium-high heat. Put in the onion, celery, carrots, and a lot of salt.

INSTRUCTIONS

STEP 1

It will take about 5 minutes of cooking and stirring every so often until the veggies are soft.

STEP 2

Add the pepper, garlic, tomato paste, and herbs and mix well. Just one minute, until it smells good. 

STEP 3

To this mix you should add tomato sauce or crushed tomatoes, green beans, canned beans, 2 teaspoons of salt, and the Parmesan rind, if you want to use it. 

STEP 4

Add the broth or water and bring it to a slow boil. Cover and cook for 25 minutes. While that's going on, cook the pasta in salty water. 

STEP 5

Follow the advice on the package to cook the pasta until it is al dente. Drain it. Add the greens to the soup and stir them in until they wilt. Put the parsley in. 

STEP 6

Make sure the soup tastes right. If you used water, add another teaspoon or so of salt. 

STEP 7

As the soup sits, the starch from the pasta will make it thicker. Grate cheese on top and serve in bowls.
