Italian Sponge Cake Recipe

– 5 large eggs (room temperature) – ¾ cup granulated sugar – 1 cup all purpose flour, sifted (135 grams) – powdered sugar for serving, optional

Pre-heat oven to 350. Spray a 9-inch springform pan with nonstick cooking spray and line the bottom with parchment paper.

Whisk room-temperature eggs and sugar in a stand mixer. Sugar and eggs should treble in volume when mixed on medium high. Pulling batter ribbons on top means ready.

Remove the stand mixer bowl and fold in the flour in two batches with a rubber spatula. Use caution when adding flour to avoid deflating eggs.

Pour batter into pan. Bake for 25–30 minutes until a toothpick inserted in the cake comes out clean.

After baking, let the cake cool on a rack for 10 minutes. Knife-loosen the cake from the pan sides and remove the collar. Let cake cool completely before serving.
