Mushroom Spinach Pasta with Shallots Recipe

A mushroom and spinach sauce is mixed with this simply wonderful pasta. It doesn't take long to make this recipe at home.

– 3 tablespoons (45 ml) extra virgin olive oil – ▢½ cup thinly sliced shallots, about 1 large or 2 medium – ▢Kosher salt – ▢10 ounces (275 g) white button mushrooms, sliced into chunky piece – ▢8 ounces (225 g) portobello mushrooms, sliced into chunky piece – ▢2 garlic cloves, finely chopped – ▢½ teaspoon crushed red chili (use less for milder heat) – ▢Freshly ground black pepper to taste – ▢8 ounces (225 g) dried pappardelle or fettuccine pasta, or 1 pound fresh pasta – ▢¼ cup (60 ml) rosé or dry white wine – ▢3 tablespoons (45 g) butter, salted or unsalted – ▢¼ cup grated Parmesan cheese, plus more for serving – ▢5 ounces (150 g) baby spinach leave

INGREDIENTS

As the water boils, add salt to a big pot. Set a 12-inch pan on medium heat. 

INSTRUCTIONS

STEP 1

Put the onions, olive oil, and ½ teaspoon of kosher salt in the pan. It will take about 5 minutes of stirring often cooking until the shallots are soft.

STEP 2

Spread the mushrooms out in a single line in the pan. Don't touch them for 5 minutes. Then add ½ teaspoon of salt and mix them with the onions. 

STEP 3

Add the garlic, chili, and black pepper, and stir them in. Cook for another 5 minutes, or until they are softened and their juices have come out.

STEP 4

While the mushrooms are cooking, bring the pasta to a boil and cook it according to the directions on the box. 

STEP 5

Please keep in mind that fresh pasta takes 2 to 4 minutes to cook and dried pasta takes 10 to 12 minutes. Drain it.

STEP 6

Turn the heat up to medium-high and add the wine. For two minutes, let it bubble and cook. Add the butter and mix it in until it melts. 

STEP 7

Take the pan off the heat and add spinach and ¼ cup of cheese. Move the leaves around until they wilt.

STEP 8

Toss the cooked pasta with the sauce in the pan after you add it. Spread more cheese on top of the pasta before serving in bowls. Enjoy a glass of wine!
