Nduja Pasta Recipe

Calabrian nduja, a spicy spreadable salami, is created with pork and chili peppers. When blended with pasta, it makes a flavorful, spicy sauce.

– 1 pound rigatoni pasta (or other similar shaped pasta) – 1 tablespoon olive oil – ½ medium onion, diced (about a cup) – 2 cloves garlic, minced – ½ cup 'nduja (casing removed) – 28 ounce can San Marzano tomatoes (crushed) – ¼ cup chopped fresh basil – parmesan for serving

Boil a large pot of salted water. Cook pasta until al dente according package guidelines. Drain pasta and reserve a cup of water.

In a big pot or skillet, heat olive oil on medium. Cook onion for 3–4 minutes until tender. Use a spoon to break up the 'nduja and garlic.

Pour in smashed tomatoes and simmer. Cook uncovered for 10-12 minutes to thicken sauce.

Put pasta in sauce and add pasta water to thin it. Completely discard. Sprinkle parmesan cheese on top and serve immediately.
