Oatmeal Cookies With Coconut Flour Recipe 

Coconut Flour Oatmeal Cookies are a great gluten-free treat. Since coconut flour is strong in fiber, these cookies are good for kids and adults. Making and freezing these cookies is easy. Soft and chewy, they smell like coconut. Bonus: they only require common items you may already have.

Ingredient

– Dry Ingredient – 1 Cup Rolled Oat – 1/2 Cup Coconut Flour – 1/4 teaspoon Sea Salt – 1/4 teaspoon Baking Soda – Wet Ingredient – 1/2 Cup Butter  – 2 Eggs Large – 1/2 Cup Sugar – 1 teaspoon Vanilla

Mix the dry ingredients Add salt, baking soda, and oats to a bowl and mix them together.

Mix Wet Ingredients Combine butter, sugar, eggs, and vanilla in a bowl. Whisk the ingredients until the batter is light and fluffy.

Mix Wet and Dry Mix the oats and coconut flour with the wet batter. Fold the mixture with a spatula to get a homogeneous dough.

Bake for 10-12 minutes at 180 C. Cool 5 minutes on the baking tray before transferring to a cooling rack. Cool thoroughly and store.
