Perfect Baked Sweet Potatoes Recipe

When you bake sweet potatoes, they should be soft, caramelized, and full of flavor. It's easy and quick to make this.  

– 2 large sweet potatoe – 1 teaspoon olive oil, optional 

INGREDIENTS

Heat the oven to 400°F (200°C). Pat dry sweet potatoes after washing. Halve them lengthwise. Place them cut-side down on a parchment-lined baking sheet.  

INSTRUCTIONS

STEP 1

Bake the potatoes for 40 minutes until they are tender, easily pierced with a fork (it should glide right through the skin), and juices are bubbling around each potato.  

STEP 2

Fork-fluff and serve warm, sliced side up. Top with whatever you desire. Allow potatoes to cool in a glass dish or plate for storage. Cover with a lid or plastic wrap and refrigerate for 3 days.   

STEP 3

Scoop the flesh for a sweet potato smoothie or purée for sweets. To reheat potatoes, microwave or bake at 350°F (175°C) for 15 minutes or until desired.
