Quick Yogurt-Lime Marinade for Chicken Recipe

This easy-to-make yogurt and lime chicken marinade will enhance tonight's chicken supper. Blend plain Greek yogurt (or whole milk yogurt), grated onion and garlic, ground spices, and fresh lime juice and zest in minutes. 

– 2 pounds boneless, skinless chicken, about 4 medium breasts or 6 thigh Yogurt marinade – ▢¾ cup unsweetened plain yogurt, any variety (Greek, whole milk, or low fat) – ▢½ cup grated onion, about ½ an onion – ▢Grated zest of 1 lime – ▢2 tablespoons fresh lime juice – ▢2 garlic cloves, grated or crushed in a garlic pre – ▢2 teaspoons ground cumin – ▢2 teaspoons kosher salt – ▢½ teaspoon cayenne pepper – ▢½ teaspoon freshly ground black pepper

Chicken in a basin or big baking dish. Whisk the marinade ingredients in a large bowl until smooth.

INSTRUCTIONS

STEP 1

Pour marinade on chicken. Fork-turn the chicken pieces to coat them evenly with marinade. Wrap in plastic.

STEP 2

Alternative: Put the chicken and marinade in a zip-top freezer bag and compress it with your hands. Refrigerate 2–24 hours.

STEP 3

Remove the chicken from the marinade and shake off any excess before cooking. Cook the chicken as desired:

Grilled chicken Heat a grill to medium-high for direct grilling. Grill racks should be oiled because yogurt sticks to grates. Until chicken is done, grill on medium heat for 5 minutes per side.

Baked chicken Preheat the oven to broil with the rack six inches from the heat. 

STEP 6

Chicken on a rack on a foil- or parchment-lined sheet pan. Broil the chicken for 5-6 minutes per side until browned and done.

STEP 7

Stovetop Heat 1-2 tablespoons oil in a large non-stick skillet on medium-high. 

STEP 8

Sear each side for 3–4 minutes until golden brown. Reduce heat to medium, cover the pan, and cook until pieces are done.
