Roasted Curry Cauliflower Naan Recipe

This is a simple recipe for roasted cauliflower that tastes great as a starter or as a main dish. naan bread with spice-roasted cabbage and other things on top of it.

– 1 large cauliflower (about 2 pounds), cored and cut into bite-size floret – ▢1 small red or yellow onion, halved and thinly sliced – ▢2 tablespoons melted ghee or butter – ▢2 tablespoons extra-virgin olive oil – ▢1 teaspoon cumin seed – ▢1 teaspoon coriander seed – ▢1 teaspoon sweet paprika – ▢1 teaspoon freshly ground black pepper – ▢½ teaspoon ground turmeric – ▢½ teaspoon kosher salt – ▢Juice of half a lemon – ▢4 prepared naan breads or flatbread crust – ▢½ cup crumbled feta – ▢3 tablespoons plain Greek-style yogurt – ▢1 cup hummu – ▢Handful fresh cilantro leave – ▢Crushed red chili pepper or Aleppo pepper

INGREDIENTS

Preheat oven to 450 (225 C). Toss cauliflower and onion with ghee and olive oil in a large bowl.

INSTRUCTIONS

STEP 1

Cook the cumin and coriander seeds in a small skillet over medium heat for 5 minutes until fragrant. Crush seeds in a mortar.

STEP 2

Blend cumin, coriander, paprika, black pepper, turmeric, and salt. Sprinkle spices on cauliflower and toss to coat. Toss again with lemon juice.

STEP 3

Roast the cauliflower mixture on a rimmed baking sheet for 25–30 minutes until soft and golden brown.

STEP 4

Heat naan on the oven rack for 10 minutes. Mix feta and yogurt.

STEP 5

Serve by spreading hummus on each naan and topping with cauliflower. Spread yogurt mixture on naan randomly. Add cilantro and chili pepper.
