Shredded Brussel Sprout Salad with Roasted Sweet Potatoes Recipe

Top shredded brussels sprouts recipe! Roasted sweet potato, candied pecans, dried cranberries, pears, and gorgonzola cheese give this healthy side dish colour, flavour, and texture! 

INGREDIENT

Roasted Sweet Potato: – 1 medium-sized sweet potato chopped into bite-sized piece – 1 to 2 Tbsp avocado oil – Pinch sea salt Brussel Sprout Salad: – 1 pound brussel sprouts shaved into thin strip – 1 large pear chopped into bite sized piece – 4 ounces crumbled gorgonzola cheese* – ⅔ cup dried cranberries – 1 cup candied pecans Cinnamon Balsamic Vinaigrette: – ¼ cup olive oil – ¼ cup balsamic vinegar – 2 Tbsp pure maple syrup – ¼ tsp ground cinnamon – 1/4 tsp sea salt to taste

INSTRUCTIONS

Preheat oven to 400F. Arrange sweet potato cubes evenly on a large baking sheet. Add olive or avocado oil and sea salt. Mix the potatoes in oil and salt with your hands.

Step 1

Bake the sweet potatoes on the centre rack for 20–25 minutes, stirring after 15 minutes, until golden brown and cooked. 

Step 2

Remove cooked sweet potatoes from oven and cool. Let the sweet potatoes cool before continuing the recipe.

Step 3

Mix the balsamic dressing ingredients in a small bowl. Store the dressing until needed. Make candied pecans as directed. These can be made a week ahead or while the sweet potato roasts.

Step 4

Shower the brussel sprouts with cool water and dry them with a paper towel before placing them on a cutting board. Shave brussel sprouts thinly with a sharp knife while holding the stem. 

Step 5

Remove hard stems. Shaving Brussels sprouts in a food processor with the shredding blade (slicing attachment or disc) is faster. Box grater or mandoline slicer can grate them. Just watch your fingers!

Step 6

Mix shredded sprouts, roasted sweet potato, candied pecans, dried cranberries, gorgonzola, and chopped pear in a large bowl. Make sure everything mixes.

Step 7

Toss ingredients in large bowl with dressing until coated.Season salad with sea salt. Add more gorgonzola, balsamic vinegar, or lemon juice.For a complete meal, serve with your main!
