Simple Easy Tortellini Soup Recipe

Creamy tomato soup, cheese tortellini, spicy Italian sausage, and fresh veggies and spices make this Tortellini Soup delicious. One-pot dinner done quickly.  

– 1 tablespoon olive oil – 1 pound Italian sausage  – 1 medium onion  – 1 medium carrot  – 2 stalks celery – 4 cloves garlic – 1 tablespoon Italian seasoning – 1 teaspoon salt  – ½ teaspoon pepper  – ¼ cup all-purpose flour – 6 cups chicken broth – 14.5 ounce fire roasted tomatoe – 2 cups tomato passata – 14 ounce cheese tortellini – 2 cups half and half – 1 cup fresh spinach

Heat olive oil in a large Dutch oven on medium. Add Italian sausage and brown for 3–5 minutes, breaking it up with a wooden spoon.

When the veggies are tender, add the onion, carrot, and celery to the skillet and simmer, turning periodically, for five minutes.

Add garlic, Italian seasoning, salt, and pepper to the pot and stir. Stir to avoid burning for 30 seconds until garlic is aromatic.

As you whisk everything together, sprinkle the flour over it. Prepare for one minute, stirring the mixture occasionally.

After adding the chicken broth in a slow and steady stream, proceed to incorporate the fire-roasted tomatoes and tomato passata.

The cheese tortellini and the half and half should be mixed together. Stir the tortellini for another ten minutes, or until it reaches the al dente stage.

Add the spinach and continue cooking for a few more minutes. Add basil and parmesan cheese as garnish, then serve.
