Simple Oatmeal Banana Pancakes Recipe

Here is the recipe for my favorite easy oatmeal banana pancakes, which are kind of healthy. They're soft, full of flavor, and really simple to make.   

– 3 medium bananas, (unpeeled weight about 13oz | 370g) – 1/2 cup (120 ml) milk, (of your choice) – 1/2 tablespoon maple syrup – 1 teaspoon vanilla extract – 1/4 teaspoon fine sea salt – 2 large egg – 1 1/3 cup (150 g) oat flour – 2 teaspoons baking powder – 1/2 teaspoon cinnamon – oil or butter for cooking

INGREDIENTS

Blend the bananas, milk, maple syrup, vanilla extract, and salt in a bowl until the mixture is smooth. An immersion mixer works great for this, but a regular blender will also work.   

INSTRUCTIONS

STEP 1

Add the eggs and mix well. Add flour to the mix, then baking powder and cinnamon. Then add the dry ingredients and mix them into the wet ones using a whisk until the mixture is smooth and free of lumps.

STEP 2

Put the pan on medium heat. You can also use a cast iron skillet or a grill. Drizzle it with a little oil. You can tell the pan is hot by running your hand over it.   

STEP 3

Then pour about a third of a cup of batter onto the pan. If you have a big pan or griddle, cook a few at a time. It's time for bubbles to form on the pancake. Let it cook on one side for three minutes.

STEP 4

For about 90 seconds more, flip the pancake over and cook the other side until it is golden brown on both sides.    

STEP 5

You might need to change the heat at this time. Lower the heat if the pancake is turning brown too fast. Boost the heat if it takes too long to cook all the way through.   

STEP 6

Add the rest of the batter and keep going. Sprinkle extra bananas (or other fruit, if you'd like) and maple syrup or chocolate sauce on top of the warm pancakes.
