This easy one-pot pork roast recipe with fresh veggies and rich broth is a comforting meal.
INGREDIENT
– 1 (2.5 to 3- pound) boneless pork butt roast– Sea salt and pepper– 2 Tbsp avocado oil– 1 large yellow onion sliced– 1.5 lbs potatoes I use baby gold potatoe– 3 large carrots chopped into large chunk– 8 ounces mushrooms chopped, optional– 5 cloves garlic minced– 3 sprigs fresh thyme– 3 cups beef broth– 1 cup red wine optional
INSTRUCTIONS
Remove pork roast to a cutting board or large plate. Remove roast netting and discard. Paper towel the roast to remove excess moisture.
Step 1
Season roast with sea salt and pepper. Heat avocado oil in a large cast iron skillet on medium-high.
Step 2
Carefully place the seasoned pork roast on the oil after it sizzles. Sear 6 minutes, flip, and sear 3–6 more minutes until golden brown.
Step 3
Stir everything into the crock pot bottom while the meat browns in the skillet. Move vegetables to make room for browned pork in crock pot.
Step 4
Cover the slow cooker and cook the pork roast until fork tender on high for 5–6 hours or low for 8–10 hours.
Step 5
Transfer slow-cooker roast to cutting board. A sharp knife or two forks can shred roast into pork chunks for serving.
Step 6
Enjoy crock pot juices and veggies with pork roast! Serve with brown rice, noodles, mashed potatoes, or crusty bread to soak up juices. Crock pot bottom juices make tasty gravy.
