Tomato Spinach Chicken Pasta

Delicious Tomato Spinach Chicken Pasta is a winner. It's easy to make, flavorful, and ready in 30 minutes. Great for weeknight dinners!  

– 12 ounces penne pasta  – ⅓ cup sun-dried tomatoe – 3 tablespoons olive oil – 1 pound chicken – ½ teaspoon salt – ½ teaspoon pepper – ½ teaspoon red pepper flake – 6 medium tomatoe – 6 cloves garlic – 10 ounces spinach – 1 cup Parmesan cheese



Follow package instructions to cook pasta al dente. Feel free to add extra mushrooms, bell peppers, or onions.

Meanwhile, cook the sun-dried tomatoes, olive oil, chicken pieces, salt, pepper, and red pepper flakes in a large skillet over medium heat for 5 minutes until the chicken is no longer pink.

Continue cooking the chopped tomatoes, garlic, and spinach in the skillet for 3 minutes until the spinach wilts.

Healthy and light, this Mediterranean-inspired recipe with chicken and vegetables is delicious.

Toss everything together thoroughly and add the drained pasta and ½ cup of Parmesan cheese to the skillet.

Over the pasta, drizzle some high-quality olive oil and then top with the remaining Parmesan cheese. Serve right away.
