Tuna, Caper & Chilli Spaghetti Recipe

Mix tuna, capers, rocket, garlic, chilli, and pasta for a healthy, quick dinner. Just 25 minutes to make.

– 150g spaghetti or linguine – 1 tbsp olive oil – 1 garlic clove, sliced – 1 red chilli, deseeded and finely chopped, plus extra to serve (optional) – 1 tbsp drained capers – small bunch of parsley, finely chopped (stalks included) – 145g tuna in spring water, drained – 90g rocket or baby spinach leave – ½ lemon, juiced

INGREDIENTS

In a big pan of salted water, cook the spaghetti for 9 to 11 minutes, or until it is al dente.

INSTRUCTIONS

STEP 1

In a wide cooking pan, heat the oil over very low heat. Add the garlic and chili and cook them slowly to flavor the oil.  

STEP 2

Take the garlic off the heat if it turns more than light yellow. If it does, it will become bitter.

STEP 3

Take out a cup of the pasta cooking water and set it aside. Then, add the spaghetti to the pan. Over low heat, toss the pasta in the oil.  

STEP 4

Add some of the pasta water to help the oil and water mix into a sauce that covers the pasta. Next, add the capers, parsley, tuna, and some salt. 

STEP 5

You want to keep the bigger pieces of tuna, so don't stir too hard. Mix the rocket and lemon juice into the spaghetti. If you want, you can serve it with extra chili flakes on top.
