– 8 (1.3 kg) bone-in chicken thighs, 6-7 ounces each, with skin– ▢Kosher salt and freshly ground black pepper– ▢2 tablespoons (30 6) chicken seasoning, or your favorite all-purpose seasoning (I used everything seasoning)– ▢Extra virgin olive oil

Put the rack in the middle of the oven. Warm the oven up to 425 degrees (220 degrees C).
INSTRUCTIONS
STEP 1
Pick a rimmed baking sheet pan that is about 13"x9" and big enough to fit the chicken without being too crowded. For easy cleanup, line it with foil or parchment paper.
STEP 2
Use paper towels to dry the chicken on all sides as much as possible. This will help the skin get crispy. Place the chicken legs on the baking sheet.
STEP 3
Season both sides of the chicken with the same amount of salt, pepper, and spice mix. Place the skin-side up and add about a tablespoon of oil to each piece.

On a meat thermometer, the chicken should read between 165 and 175 degrees Fahrenheit (76 to 79 degrees Celsius). Add the pan juices to the chicken when you serve it.
