Italian Chicken Sausage Stew Recipe

Ready in 30! A delicious one-dish chicken sausage stew with cannellini beans, greens, marinara sauce, grated cheese, and toasted breadcrumbs.

– ½ cup (108 g) fresh breadcrumbs, or panko – ▢4 tablespoons (60 ml) extra-virgin olive oil – ▢1 cup (160 g) chopped yellow onion – ▢1 pound (450 g) uncooked chicken sausage, sliced into 2-inch piece – ▢1 teaspoon finely chopped garlic – ▢½ – 1 teaspoon crushed red chili pepper – ▢1 tablespoon chopped fresh rosemary – ▢Kosher salt – ▢2 15-ounce cans (850 g) cannellini beans, drained – ▢½ cup (125 ml) chicken broth – ▢2½ cups (500 ml) prepared marinara sauce, (one 24-ounce jar) or homemade marinara sauce – ▢2 cups (60 g) torn kale, or other leafy green – ▢⅓ cup (30 g) grated Pecorino Romano cheese, or Parmesan

Toast breadcrumbs Cook 1 tablespoon of oil in a small skillet over medium-high heat. 

INSTRUCTIONS

STEP 1

Add the breadcrumbs and cook 2-3 minutes, swirling often, until crisp and golden brown. Set aside.

STEP 2

Cook stew In a 12-inch skillet, add the remaining 3 tablespoons olive oil. Add onion to medium heat. Cook the onion for 3-5 minutes until transparent.

STEP 3

Add sausage and heat to medium-high. Sauté the sausage until it browns, stirring to avoid sticking.

STEP 4

Season with garlic, rosemary, red pepper, and a touch of salt. Cook 30 seconds until aromatic. Add beans, stock, and marinara and simmer.

STEP 5

To thicken, cook 10-15 minutes, stirring occasionally. Sprinkle breadcrumbs and cheese on top and serve.
