This cod, broccoli, and orzo traybake is quick and easy for weeknights. Healthy, low-fat, and traybake, it requires little cleanup!
– ½ tbsp olive oil, plus a drizzle– 1 onion, chopped– 1 tsp smoked paprika, plus a pinch– ½-1 tbsp chipotle paste– 200g long-stem broccoli– 400ml hot vegetable stock– 150g orzo– ½ small bunch of dill, chopped– ½ small bunch of parsley, chopped– 50g frozen peas– 2 sustainable skinless cod fillets– 4 tbsp fat-free yogurt
INGREDIENTS
Set the oven to 200C/180C fan/gas 6. In a large frying pan that can go in the oven, heat the oil and cook the onion for 5 minutes, until it's soft.
INSTRUCTIONS
STEP 1
Put in the broccoli, water, paprika paste, and chipotle paste. Add the orzo and mix it in. Then put the dish in the oven for 10 minutes.
STEP 2
Add half of the peas and herbs and mix them in. Then, place the fish on top of the orzo. Add some oil and a pinch of paprika.
STEP 3
Then season to taste. Let it cook for 8 to 10 minutes, or until the fish is done and the orzo is soft.
STEP 4
The rest of the herbs should be mixed with the yogurt. If it's too thick, add a little water and serve with the fish and orzo.
