Yogurt-marinated Chicken Kabobs Recipe

The delectable skewers contain boneless chicken (breast or thigh), cherry tomatoes, zucchini, bell pepper, and feta cheese. Extra sauce and lemon juice are recommended!

Yogurt Marinade + Sauce – ▢½ cup (75 ml) thick plain yogurt, Greek or Icelandic-style preferred – ▢¼ cup (60 ml) tahini paste – ▢2 tablespoons (30 ml) extra virgin olive oil – ▢2 tablespoons (30 ml) fresh lemon juice – ▢2 tablespoons (15 ml) cold water – ▢2 teaspoons (2 ml) grated or finely chopped garlic – ▢1 teaspoon ground cumin – ▢1 teaspoon dried oregano, or 2 teaspoons fresh chopped oregano or thyme – ▢¾ teaspoon kosher salt – ▢¼-½ teaspoon cayenne pepper, to taste Chicken Skewer – ▢1 ½ pounds (675 g) boneless chicken thigh or breast, cut into 1 1/2-inch chunk – ▢(2 ml) Kosher salt – ▢Freshly ground black pepper – ▢1½-2 cups (225 g) red cherry tomatoes, or use assorted color – ▢1 medium (250 g) zucchini (about 10 ounces), cut into 1 1/2-inch chunk – ▢2 red, yellow or orange bell peppers, cut into 2-inch piece – ▢Extra virgin olive oil – ▢½ cup crumbled feta cheese – ▢Chopped fresh cilantro – ▢Fresh lemon wedges, for serving

INGREDIENTS

Mix marinade/sauce Whisk everything in a bowl until smooth. The sauce can be made 3-5 days ahead. Store it in the fridge until use. 

INSTRUCTIONS

STEP 1

Adding cold water a few teaspoons at a time will thicken the sauce and make it spoonable.

STEP 2

Prepare and fry chicken skewers Mix the chicken pieces with ½ cup of marinade, kosher salt, and black pepper to taste in a large bowl. 

STEP 3

Refrigerate the chicken for up to 6 hours or marinate for 15 minutes at room temperature.

STEP 4

Direct grilling requires a medium-high grill temperature of 375F or 190C 15 minutes before cooking. 

STEP 5

Preheat the oven to 450 degrees and prepare a large rimmed baking sheet (or two medium ones) with aluminum foil if cooking the skewers indoors.

STEP 6

Skewer chicken, zucchini, tomatoes, and bell peppers alternately. Try 10 pieces per 12-inch skewer. Apply a spoonful of olive oil to each skewer.

STEP 7

Grilling: Place the skewers on the prepared grill and cook the chicken for 3-5 minutes per side. If they're browning too rapidly, cover and finish cooking on the cooler grill. 

STEP 8

Baking:  Place skewers on baking sheets. Bake 20 minutes, flipping halfway, until chicken is no longer pink and tomatoes are bursting.

STEP 9

To serve Place ¼ cup of yogurt sauce on a big dish. Place skewers on top and sprinkle with feta and cilantro. Squeeze lemon wedges and serve with more sauce.
